A healthy, sugar-free jam thickened naturally with chia seeds and sweetened with stevia.
This healthy, sugar-free blueberry chia jam is the perfect alternative to traditional sugary preserves. By using your frozen blueberries and thickening the mixture with chia seeds, we completely eliminate the need for heavy sugars or commercial pectin. Sweetened naturally with a touch of stevia sweetener powder, this jam is fantastic spread onto whole wheat sourdough, swirled into morning yogurt, or topped on warm oatmeal. Chia seeds provide an excellent boost of fiber and omega-3s, making this vibrant, deeply purple spread a truly guilt-free treat that comes together in minutes!
Ingredients
- 500 g Frozen Blueberries (about 3½ cups)
- 0.5 Lemon (Juiced) (½ lemon)
- 2 tbsp Stevia Sweetener Powder
- 3 tbsp Chia Seeds (about 30g)
Instructions
- 1In a medium heavy-bottomed saucepan, combine the frozen blueberries and the freshly squeezed juice from the lemon.
- 2Heat over medium-low, stirring occasionally, until the frozen blueberries thaw completely and begin to release their natural juices, which should take about 5 minutes.
- 3Increase the heat slightly to medium. Simmer the mixture for 5 to 8 minutes, using a potato masher or the back of a sturdy fork to gently crush the frozen blueberries to your desired texture.
- 4Remove the saucepan from the heat. Stir in the stevia sweetener powder, tasting as you go to reach your preferred level of sweetness.
- 5Add the chia seeds to the pan and stir vigorously to distribute them evenly. Let the mixture sit undisturbed in the pan for 5 to 10 minutes so the chia seeds can absorb the liquid and naturally thicken the jam.
- 6Spoon the finished jam into clean glass jars. Allow it to cool completely before covering with lids and storing in the refrigerator. The jam will continue to set and thicken as it chills!
Chef's Tips
- •Stevia behaves very differently from traditional sugar. Because it doesn't provide structural thickening or react with pectin, the chia seeds are absolutely essential here to create that classic 'jammy' texture.
- •Always taste your berries before adding all the stevia! Some berries are naturally very sweet, while others are quite tart, so adjust the sweetener accordingly.
- •This chia jam is highly perishable since it lacks the preserving qualities of traditional sugar. It will keep beautifully in the fridge for about 1 to 2 weeks.
- •If you prefer a completely smooth jam without the noticeable texture of chia seeds, you can carefully blend the mixture with an immersion blender right before adding the chia, or blend the whole mix after it sits.
