A sweet, savory, and bouncy glass noodle stir-fry packed with tender beef strips and fresh vegetables. It makes the perfect base for your Mayak eggs!
Looking for the perfect pairing for your Korean marinated eggs? This Savoury Beef & Spinach Glass Noodles recipe is an incredible meal that perfectly complements the rich, jammy yolks of Mayak eggs. Inspired by classic Korean Japchae, this stir-fry uses incredibly bouncy glass noodles tossed with tender strips of beef steak, vibrant red bell peppers, and fresh spinach. Because it utilizes sweet soya sauce and umami-packed oyster sauce, the noodles take on a beautifully caramelized, savory-sweet glaze. Topping this Savoury Beef & Spinach Glass Noodles with your prepared Mayak eggs creates a deeply comforting, protein-packed dinner where the runny egg yolk creates a rich sauce that coats every single noodle.
Ingredients
- 150 g Clear Noodle (about 2 servings)
- 200 g Beef Steak
- 100 g Baby Spinach (about 3 cups loosely packed)
- 1 medium Carrot
- 1 medium Red Bell Pepper
- 0.5 medium White Onion
- 2 cloves Garlic
- 3 tbsp Sweet Soya Sauce
- 1 tbsp Oyster Sauce
- 1 tbsp Olive Oil
- 1 tbsp Roasted Sesame
Instructions
- 1Boil the clear noodles in a pot of water according to package instructions until chewy and translucent. Drain them, rinse under cold water to stop the cooking, and set aside.
- 2Thinly slice the beef steak into bite-sized strips. Julienne the carrot, slice the red bell pepper, and thinly slice the white onion.
- 3Heat the olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and white onion, sautéing until fragrant.
- 4Add the sliced beef steak to the pan and stir-fry for 2-3 minutes until browned on the outside.
- 5Toss in the carrot and red bell pepper. Cook for another 2 minutes until the vegetables begin to soften.
- 6Add the fresh baby spinach and stir until it just begins to wilt.
- 7Add the cooked clear noodles to the pan. Pour over the sweet soya sauce and oyster sauce.
- 8Toss everything together continuously for 2 minutes until the noodles absorb the sauce and are evenly coated.
- 9Remove from heat, sprinkle with roasted sesame, and serve hot. Top your bowl with your homemade Mayak eggs, allowing the soft yolk to mix with the savory noodles!
Chef's Tips
- •Using kitchen scissors to cut the long glass noodles once or twice after boiling makes them much easier to stir-fry and eat.
- •If your Mayak eggs are very salty, you can reduce the oyster sauce in this recipe slightly to maintain a good flavor balance.
