Ingredients
- 500 g Lean Ground Beef
- 200 g Snow Peas (about 2 cups loosely packed)
- 200 g Jasmine Rice (1 cup uncooked)
- 1 tbsp Fresh Ginger (1 inch piece, minced)
- 4 tbsp Soy Sauce
- 3 cloves Garlic
- 150 g Mushrooms (about 1.5 cups sliced)
- 200 g Broccoli (about 2 cups florets)
- 1 medium Red Onion
- 1 tbsp Honey
- 1 tbsp Vegetable Oil
- 1 lb Lean Ground Beef
- 7 oz Snow Peas (about 2 cups loosely packed)
- 1 cup Jasmine Rice (uncooked)
- 1 tbsp Fresh Ginger (1 inch piece, minced)
- 4 tbsp Soy Sauce
- 3 cloves Garlic
- 5 oz Mushrooms (about 1.5 cups sliced)
- 7 oz Broccoli (about 2 cups florets)
- 1 medium Red Onion
- 1 tbsp Honey
- 1 tbsp Vegetable Oil
Instructions
- 1Rinse the Jasmine Rice under cold water until it runs clear, then cook it in a rice cooker or a pot on the stove.
- 2While the Jasmine Rice is cooking, slice the mushrooms, chop the broccoli into small florets, slice the red onion, and mince the garlic and fresh ginger.
- 3Heat the vegetable oil in a large wok or skillet over medium-high heat.
- 4Add the lean ground beef to the wok, breaking it apart with a spatula. Cook until browned and cooked through, about 5 minutes. If there is excess fat, carefully drain it away to keep the dish diet-friendly.
- 5Add the minced garlic, minced fresh ginger, and sliced red onion to the beef. Sauté for 1 to 2 minutes until fragrant and the onions begin to soften.
- 6Toss in the mushrooms, broccoli, and snow peas. Stir-fry for 4 to 5 minutes until the vegetables are vibrant and tender-crisp.
- 7In a small bowl, whisk together the soy sauce and honey. Pour this mixture over the beef and vegetables, tossing constantly for another 1 to 2 minutes until everything is well coated and the sauce slightly thickens.
- 8Serve the hot stir-fry immediately over a portioned bowl of the cooked Jasmine Rice.
Chef's Tips
- •To keep this low-carb, you can swap the rice for cauliflower rice or simply eat the stir-fry on its own.
- •Make sure your wok is very hot before adding the beef to ensure you get a good sear rather than steaming the meat.
