Ingredients
- 300 g White Rice
- 450 g Chicken Breast
- 2 tbsp Olive Oil
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 2 medium Bell Peppers
- 1 medium Onion
- 3 cloves Garlic
- 80 ml Soy Sauce
- 3 tbsp Honey
- 150 g Spinach
Instructions
- 1Cook the rice according to package instructions and set aside.
- 2Cut the chicken breast into bite-sized cubes. Season with salt and black pepper.
- 3Slice the bell peppers and onion into strips. Minced the garlic.
- 4Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the chicken breast and cook for 5-6 minutes until browned and cooked through. Remove chicken from the pan and set aside.

- 6Add the minced garlic and cook for 30 seconds until fragrant.
- 7In a small bowl, whisk together the soy sauce and honey.
- 8Return the cooked chicken to the pan. Pour the sauce mixture over the ingredients and toss to coat.
- 9Add the fresh spinach to the pan and toss gently for 1-2 minutes until just wilted.
- 10Serve the stir-fry immediately over the cooked rice.
Chef's Tips
- •Prep all your vegetables before you start cooking, as the stir-fry process moves quickly.
- •If you like a bit of heat, add a pinch of red pepper flakes or sriracha if you have it (not listed in inventory).
- •Don't overcook the spinach; add it at the very end to keep its bright color and nutrients.
