A homemade recipe for Thai Shrimp with Glass Noodles. Fragrant with spices, chewy glass noodles that absorb the savory sauce—delicious just like at a restaurant.

If you are looking for a seafood menu that is easy to make and tastes like restaurant quality, Thai Shrimp with Glass Noodles is the perfect answer. This dish is a favorite for all ages due to its mellow flavor and the aroma of spices like coriander roots, garlic, black pepper, and mature ginger, which blend perfectly with the special sauce. The secret to a great Goong Ob Woonsen recipe lies in choosing fresh, large, sweet, and bouncy shrimp, and preparing a rich sauce. When baked with glass noodles, the noodles absorb all the sauce and herbal aromas, resulting in a chewy texture that isn't mushy. Making Thai Shrimp with Glass Noodles at home is easier than you think; you don't even need a clay pot—a deep skillet or pan with a lid works just as well. You can also adjust the sauce to your family's preference, whether you like it saltier, sweeter, or extra fragrant with sesame oil. This menu is ideal for a special dinner or welcoming guests. Try this recipe and discover how easy and fun restaurant-style cooking at home can be.

Ingredients

  • 300 g Fresh white shrimp (about 10-12 pieces)
  • 80 g Dried glass noodles (about 2 small packs)
  • 15 g Garlic (3-4 cloves)
  • 15 g Mature ginger (4-5 slices)
  • 5 g Coriander roots (3 roots)
  • 1 tsp Black peppercorns
  • 2 tbsp Light soy sauce
  • 2 tbsp Oyster sauce
  • 1 tsp Dark soy sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Granulated sugar
  • 120 ml Chicken stock
  • 20 g Chinese celery (1 pinch)

Instructions

  1. 1
Soak the Dried glass noodles in water until soft, then drain and set aside.
  2. 2
Prepare the sauce by mixing the Chicken stock with Light soy sauce, Oyster sauce, Dark soy sauce, Sesame oil, and Granulated sugar. Stir until the Granulated sugar is completely dissolved.
  3. 3
Toss the soaked Dried glass noodles with the prepared sauce until well combined.
  4. 4
Place a skillet or clay pot on the stove over medium-low heat. Add Coriander roots, Garlic, Mature ginger, and Black peppercorns. Sauté until fragrant.
  5. 5
Pour the seasoned Dried glass noodles into the pan, then place the Fresh white shrimp on the very top.
  6. 6
Cover the pot or pan and cook over medium heat for about 5-7 minutes until the Fresh white shrimp are cooked and the Dried glass noodles have absorbed the sauce perfectly.
  7. 7
Open the lid, sprinkle with Chinese celery, cover for another 30 seconds, then turn off the heat and serve.

Chef's Tips

  • Do not soak the glass noodles for too long, or they will become mushy instead of chewy when cooked.
  • If you like it spicy, you can crush some bird's eye chilies and add them with the spices.
  • Use medium-low heat during baking to prevent the bottom from burning before the shrimp are fully cooked.
