A light yet filling dinner packed with brain-boosting ingredients like fish, berries, and nuts.
Baked Salmon Salad with Blueberries and Avocado is the quintessence of healthy eating, fitting perfectly into the rigorous yet delicious principles of the MIND diet. This diet was designed by scientists to support cognitive function and protect our brain from aging, and this specific composition combines nearly all of its most important pillars. Baked Salmon Salad with Blueberries and Avocado provides valuable omega-3 fatty acids from the salmon, which are crucial for building and regenerating neurons. Why does this combination of ingredients work so well? The delicate sweetness of fresh blueberries perfectly cuts through the creamy, buttery flavor of ripe avocado, while crunchy walnuts add the necessary texture we look for in a satisfying dinner. When preparing Baked Salmon Salad with Blueberries and Avocado, it's worth choosing the highest quality products – fresh baby spinach should be dark green and firm, and the salmon is best from certified MSC fisheries or wild-caught. The MIND diet highlights berries as the only recommended fruit group due to their powerful antioxidant potential, making blueberries the true star of this plate. Walnuts, resembling the shape of a brain, are the best choice among all nuts for supporting concentration. The dish is topped with a simple dressing based on extra virgin olive oil, which is the primary and recommended source of fat in this nutrition model. This dish proves that caring for mental fitness can be an incredible culinary adventure, and a light dinner can be filling and full of deep flavors. Remember not to overcook the salmon during baking – it should remain slightly pink and juicy inside to harmonize perfectly with the rest of the ingredients.
Ingredients
- 250 g Salmon fillet (about 2 smaller fillets)
- 100 g Fresh baby spinach (about 4 large handfuls)
- 150 g Blueberries (about 1 cup)
- 1 pc Avocado
- 30 g Walnuts (about 1/4 cup)
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
- 1 tsp Honey
Instructions
- 1Preheat the oven to 200°C (400°F). Season the salmon fillet with salt and pepper and place it in a baking dish.
- 2Bake the salmon fillet for about 12–15 minutes, until the meat flakes easily with a fork. After baking, set aside to cool slightly, then divide into smaller pieces.
- 3Arrange the fresh baby spinach on platters.
- 4Add the washed blueberries, diced avocado, and chopped walnuts.
- 5Place the pieces of baked salmon fillet on top.
- 6In a small jar or bowl, whisk together the olive oil, lemon juice, and honey. Drizzle the salad with the prepared dressing just before serving.
Chef's Tips
- •If you're short on time, you can use hot-smoked salmon – it doesn't require baking.
- •It's worth briefly toasting the walnuts in a dry pan to bring out their deeper aroma.
- •Instead of blueberries, you can use raspberries or wild blueberries – all berries are recommended in the MIND diet.
