A quick, healthy, and colorful vegetarian dish that is on the table in less than 20 minutes.
The Colorful Rainbow Vegetable Stir-Fry is the ultimate recipe for anyone looking for a quick, healthy, and vibrant meal. In this Colorful Rainbow Vegetable Stir-Fry, various textures and flavors come together into a harmonious whole that not only tastes fantastic but is also a visual highlight on the plate. Why does this dish work so well? The secret lies in the correct timing when sautéing: the vegetables are cooked briefly at high heat so they retain their crunch and the vitamins are preserved as much as possible. A high-quality Colorful Rainbow Vegetable Stir-Fry relies on the quality of its ingredients. The combination of sweet carrots, savory zucchini, and crunchy bell peppers provides a wide range of nutrients. A professional tip: cut the vegetables into pieces as uniform as possible so that everything reaches the perfect cooking point at the same time. If you want to further refine the stir-fry, you can add toasted sesame seeds or a splash of fresh lime juice at the end. This dish is also extremely versatile—almost any vegetable you have left in the fridge can be integrated. Whether as a light dinner or a side dish for fish or meat, this recipe is a true all-rounder in modern cuisine. Enjoy the natural sweetness of the vegetables, which is particularly intense thanks to the brief sautéing in olive oil.
Ingredients
- 1 whole Red bell pepper
- 1 whole Yellow bell pepper
- 1 whole Zucchini (approx. 200g)
- 2 whole Carrots
- 1 whole Yellow onion
- 2 cloves Garlic
- 2 tbsp Olive oil
- 2 tbsp Soy sauce
- 1 pinch Salt and pepper
Instructions

- 2Cut the red bell pepper, yellow bell pepper, zucchini, and carrots into uniform, bite-sized strips or slices.
- 3Heat the olive oil in a pan over medium to high heat.
- 4Sauté the carrots first for about 3 minutes, as they take the longest to cook.
- 5Add the red bell pepper, yellow bell pepper, and onion and fry for another 4 minutes, stirring occasionally.
- 6Add the zucchini and garlic to the pan and cook everything for another 3 minutes until the vegetables are tender but still crunchy.
- 7Deglaze with the soy sauce and season with salt and pepper.
- 8Serve warm and enjoy as desired.
Chef's Tips
- •For an Asian touch, a little fresh ginger can be added with the garlic at the beginning.
- •Be careful not to overload the pan so that the vegetables fry rather than steam in their own juice.
- •A teaspoon of honey or agave nectar in the soy sauce provides a subtle caramel note.
