Ingredients
- 2 count Large Eggs
- 50 g Broccoli Florets
- 30 g Green Bell Pepper
- 15 g Goat Cheese
- 1 tsp Olive Oil
- 1 pinch Salt
- 1 pinch Black Pepper
Instructions
- 1Chop the broccoli into small, bite-sized florets and dice the green bell pepper.
- 2In a small bowl, crack the eggs and whisk them together with a pinch of salt and black pepper.
- 3Heat the olive oil in a non-stick skillet over medium heat.
- 4Add the broccoli and green bell pepper to the skillet. Sauté for 3-4 minutes until the vegetables are tender-crisp.
- 5Lower the heat to low and pour in the whisked eggs.
- 6Gently push the eggs across the pan with a spatula. When the eggs are halfway set, crumble in the goat cheese.
- 7Continue to cook gently until the eggs are set but still soft. Serve immediately.
Chef's Tips
- •Chopping the broccoli small ensures it cooks quickly without needing to be blanched first.
- •For extra fluffiness, add a splash of water or milk to the eggs before whisking.
