A vibrant, all-vegetable salad featuring protein-rich beans and fresh spinach tossed in a bright lemon-garlic dressing.
This protein-packed salad proves you don't need meat to fuel your day. By combining nutrient-dense spinach with hearty beans, this dish offers a substantial amount of plant-based protein and fiber. The natural earthiness of the beans is brightened by a zesty lemon-garlic dressing, while raw carrots and onions add a satisfying crunch. It is a clean, refreshing meal that supports sustained energy levels without the heaviness of animal products. Perfect for a light lunch or a nutrient-dense side dish.
Ingredients
- 150 g Spinach
- 400 g Canned Beans (White or Kidney)
- 2 medium Carrots
- 0.5 medium Red Onion
- 3 tbsp Olive Oil
- 1 whole Lemon (Juiced)
- 1 clove Garlic Clove
- 0.5 tsp Salt
- 0.25 tsp Black Pepper
Instructions
- 1Drain and rinse the beans thoroughly in a colander.
- 2Peel and grate the carrots, and finely dice the onion and garlic.
- 3In a small jar or bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.
- 4In a large salad bowl, combine the spinach, rinsed beans, grated carrots, and diced onion.
- 5Pour the dressing over the salad and toss well to coat every leaf and bean.
Chef's Tips
- •Letting the salad sit for 10 minutes before eating allows the beans to absorb the lemon garlic flavor.
- •Mash a few beans into the dressing to create a creamier texture without dairy.
