A fiery, high-protein chicken and zucchini hash topped with creamy avocado, paired with an instant no-cook banana and chia pudding dessert.
Looking for a meal that hits both your savory cravings and your sweet tooth without leaving a mountain of dishes in the sink? This One-Pan Sweet Chili Chicken Skillet is the perfect solution for busy weeknights. By combining fresh ground chicken with chopped chicken burgers, you get a fantastic contrast in textures—the tender mince blends seamlessly with the hearty, pre-seasoned patty bites. Tossed in a vibrant chili sauce, this high-protein hash is packed with flavor. The heat from the chili is perfectly balanced by creamy, cooling slices of fresh avocado and a dollop of Greek yogurt on top.
But the magic of this meal plan doesn't stop at the main course. Since we promised a quick and easy cleanup, dessert requires exactly zero cooking! While your chicken skillet rests, you can assemble a refreshing banana chia pudding using your pre-made chia base. The natural sweetness of ripe bananas layered over the thick, omega-rich chia pudding provides the ultimate soothing finish to the spicy chicken dish. This dynamic duo proves that you can enjoy a beautifully balanced, multi-course meal at home while strictly using just one pan for cooking. Whether you are meal prepping or putting together a fast dinner for two, this quick and easy chicken recipe is sure to become a regular in your rotation.
Ingredients
- 250 g Ground Chicken
- 200 g Chicken Burgers (2 patties, chopped)
- 200 g Zucchini (1 medium, diced)
- 1 tbsp Salted Butter
- 2 tbsp Chili Sauce
- 1 large Avocado (sliced)
- 2 tbsp Greek Yogurt
- 350 g Chia Pudding (about 1.5 cups)
- 2 medium Bananas (sliced)
Instructions
- 1Place a large skillet over medium-high heat and melt the salted butter.
- 2Add the ground chicken and diced zucchini to the pan. Cook for 5-6 minutes, breaking the meat apart, until the chicken is browned and the vegetables begin to soften.
- 3Toss in the chopped chicken burgers and drizzle the chili sauce over the mixture. Stir everything well and cook for another 3-4 minutes until the patty pieces are heated through and the hash is nicely glazed. Remove from heat.
- 4Divide the savory chicken skillet between two plates. Top each serving with fresh sliced avocado and a cooling dollop of Greek yogurt.
- 5For your quick dessert, simply divide the prepared chia pudding into two small bowls and top generously with the sliced bananas.
Chef's Tips
- •If your chili sauce is very hot, start with 1 tablespoon and taste the hash before adding the rest.
- •You can chop the chicken burgers while they are still slightly frozen; it makes getting clean, even cubes much easier.
- •Squeeze a little lime juice over the avocado if you have it, to keep it bright green and add a pop of acidity.
