A lightning-fast, umami-rich stir-fry combining frozen edamame, savory minced beef, and crisp bok choy in a simple miso-soy glaze.
This incredibly savory Miso Beef and Edamame Stir-Fry is the perfect way to utilize your freezer stash while saving your highly perishable fridge ingredients. By combining protein-packed edamame with rich, earthy miso paste and savory ground beef, you create a lightning-fast, umami-bomb of a dinner. The crispness of the bok choy brings a refreshing crunch that balances out the deep flavors of the beef and miso sauce. Served over warm, sticky sushi rice, this Miso Beef and Edamame Stir-Fry feels like a gourmet Japanese meal right at home, but it comes together in just a few minutes in a single pan.
Ingredients
- 150 g Edamame (1 cup shelled)
- 250 g Minced Beef (about ½ pound)
- 1 bunch Bok Choy (about 2 cups chopped)
- 1.5 tbsp Miso Paste
- 2 tbsp Soy Sauce
- 2 cloves Garlic
- 1 tbsp Ginger (freshly grated)
- 150 g Japanese Sushi Rice (about ¾ cup dry)
Instructions
- 1Rinse the Japanese sushi rice under cold water until it runs clear, then cook according to your preferred method.
- 2In a small bowl, whisk together the miso paste, soy sauce, and a splash of warm water until smooth.
- 3Heat your skillet over medium-high heat. Add the minced beef and cook until browned, breaking it apart as it cooks.
- 4Stir the minced garlic and grated ginger into the minced beef and sauté for about one minute until fragrant.
- 5Add the frozen edamame and chopped bok choy to the pan, tossing constantly until the greens are wilted and vibrant.
- 6Pour the miso-soy sauce over the mixture, tossing to coat the minced beef, edamame, and bok choy evenly. Let it bubble for a minute.
- 7Serve the hot stir-fry immediately over bowls of the fluffy Japanese sushi rice.
Chef's Tips
- •If the sauce is too thick, add a tablespoon of water at a time until you reach your desired consistency.
- •For an extra kick, a drizzle of sriracha or chili flakes pairs beautifully with the umami miso flavor.
