Ingredients
- 3 medium Soft Apples
- 2 tbsp Butter
- 50 g Brown Sugar (1/4 cup loosely packed)
- 1 tsp Cinnamon
- 1 tbsp Corn Starch
- 1 tsp Lemon
- 2 medium Tortilla Wraps
- 1 tbsp Vegetable Oil
Instructions
- 1Peel, core, and dice the soft apples into very small cubes so they cook down nicely.
- 2Melt the butter in a skillet over medium heat. Add the diced soft apples, brown sugar, and cinnamon.
- 3Cook for about 6 to 8 minutes, stirring occasionally, until the apples are very tender.
- 4In a small bowl, mix the corn starch with 2 tablespoons of cold water until smooth. Pour it into the skillet with the apples and stir constantly for 1 minute until the mixture forms a thick, gooey syrup. Stir in a squeeze of lemon juice, then remove from heat.
- 5Lay the tortilla wraps flat. Spoon the thick apple filling onto the center of each wrap.
- 6Fold the left and right sides of the wrap inwards over the filling, then fold the bottom up and the top down, creating a tight, sealed rectangular pocket.
- 7Wipe the skillet clean, add the vegetable oil, and place back over medium heat.
- 8Place the tortilla pockets seam-side down in the skillet. Fry for 2 to 3 minutes per side until the outside is golden brown, blistered, and very crispy.
