Ingredients
- 400 g Beef Cubes
- 160 g Freekeh (about 1 cup)
- 150 g Red Onions (1 large onion)
- 10 g Garlic (2 cloves)
- 1 tbsp Olive Oil
- 1 tbsp Chicken Broth Powder
- 1 count Cinnamon Sticks
- 4 count Cardamom Pods
- 1 tsp Sea Salt
- 1500 ml Water
- 5 g Thyme (2 sprigs)
Instructions
- 1Finely dice the red onions. Mince the garlic.
- 2Place a Dutch oven over medium-high heat and add the olive oil. Once hot, add the beef cubes and sear until browned on all sides, about 5-7 minutes.
- 3Lower the heat to medium and stir in the chopped red onions and garlic. Sauté for another 4 minutes until the onions soften slightly.
- 4Rinse the freekeh thoroughly under cold water, then drain and add it to the pot along with the cinnamon sticks and cardamom pods. Toast everything for 2 minutes to release the aromas.
- 5Pour in the water, then stir in the chicken broth powder and sea salt.
- 6Bring the soup to a boil, then reduce the heat to low, cover the pot, and let it simmer gently for 40 to 45 minutes, or until the beef cubes and freekeh are completely tender.
- 7Remove the cinnamon sticks and cardamom pods before serving. Ladle the hot soup into bowls and garnish with fresh leaves plucked from the thyme sprigs.

- •For an even lower-fat option, after searing the beef, you can briefly drain any rendered fat from the pot before adding the onions.
