Hearty potato patties that, thanks to the egg, are more tender inside and stable when frying.

This Potato Patties recipe is a true home-cooking classic that becomes even tastier with the addition of egg. Thanks to the egg, the dough becomes more elastic, and the Potato Patties themselves hold their shape better during frying and gain a richer flavor. This dish perfectly combines a soft, tender center with a crispy golden crust. Making Potato Patties doesn't take much time, especially if you have leftover mash from yesterday, but even cooking from scratch is worth the result. The secret to the perfect crust lies in breading them with flour and frying in well-heated sunflower oil. Serve them hot with ketchup or mustard for the perfect balance of flavors. It's a simple, budget-friendly, and incredibly cozy dish that both adults and children will love.

Ingredients

  • 800 g Potato (about 4-5 medium potatoes)
  • 1 count Egg
  • 80 g Flour
  • 2 tbsp Sunflower oil
  • 1 tsp Salt
  • 0.25 tsp Pepper
  • 1 tbsp Mustard
  • 1 tbsp Ketchup

Instructions

  1. 1
Peel the potato and boil in salted water until fully cooked.
  2. 2
Drain all the water and thoroughly mash the potato into a smooth puree.
  3. 3
Let the puree cool slightly (so the egg doesn't curdle), then add one egg, salt, pepper, and most of the flour (leave about 1-2 tablespoons for breading). Mix thoroughly until smooth.
  4. 4
Shape the potato mixture into small round or oval patties.
  5. 5
Lightly coat each patty in the remaining flour on both sides.
  6. 6
Heat the sunflower oil in a pan over medium heat.
  7. 7
Fry the patties for 3-5 minutes on each side until a solid golden-brown crust appears.
  8. 8
Serve hot, using mustard or ketchup as a sauce.

Chef's Tips

  • The egg helps the mass stay together, so these patties can be made a bit larger.
  • If the mixture seems too sticky, wet your hands with water when shaping the patties.
  • For a more interesting texture, you can add a little semolina to the mixture for extra crunch.
