A quick, crispy tortilla with a creamy bean filling and fresh spinach.

Looking for a quick dinner idea that supports your health and memory? Whole-wheat quesadilla with white beans and spinach is the perfect solution. As part of the MIND diet, which emphasizes legumes and green leafy vegetables, this recipe is a vitamin bomb for your brain. The key is the creamy white bean paste that replaces fatty cheeses, and fresh spinach providing folic acid. Whole-wheat quesadilla is not only tasty but also incredibly filling thanks to the high fiber content. Spices like cumin and garlic add depth without much salt. It's a great example of how a simple lunch or quick dinner can prevent neurodegenerative diseases. Preparing this whole-wheat quesadilla takes just 10-15 minutes, making it ideal for busy evenings. Remember to use high-quality olive oil, the foundation of the Mediterranean and MIND diets, for essential fatty acids.

Ingredients

  • 2 pieces Whole-wheat tortilla
  • 120 g Canned white beans (about ½ cup)
  • 30 g Fresh spinach (1 large handful)
  • 1 tbsp Olive oil
  • 1 tsp Lemon juice
  • 0.5 tsp Cumin
  • 0.25 tsp Garlic powder
  • 20 g Feta cheese (about 1 tbsp crumbled)

Instructions

  1. 1
Rinse the white beans in a sieve under running water and drain thoroughly.
  2. 2
In a small bowl, mash the white beans with a fork into a relatively smooth paste. Add the lemon juice, cumin, garlic powder, and a pinch of salt and pepper. Mix well.
  3. 3
Spread the prepared bean paste evenly onto one whole-wheat tortilla.
  4. 4
Place the washed and dried spinach on top of the paste and sprinkle with crumbled feta cheese.
  5. 5
Cover with the second whole-wheat tortilla and press down lightly.
  6. 6
Heat the olive oil in a pan over medium heat.
  7. 7
Place the quesadilla in the pan and fry for about 2-3 minutes on each side until the tortilla is golden and crispy.
  8. 8
Remove from the pan, wait one minute, and cut into triangles.

Chef's Tips

  • If you want to add more crunch, you can add a few chopped walnuts inside.
  • Spinach can be replaced with kale, but it should be briefly sautéed in a pan beforehand to soften it.
  • Serve with homemade tomato salsa or plain yogurt for extra freshness.
