Ingredients
- 150 g Red lentils (about ¾ cup)
- 1 unit Onion
- 2 cloves Garlic
- 400 g Canned diced tomatoes (1 can)
- 100 g Fresh baby spinach (about 4 handfuls)
- 2 tbsp Olive oil
- 1 tsp Ground turmeric
- 250 ml Vegetable broth
Instructions
- 1Finely chop the onion and garlic.
- 2Heat olive oil in a deep skillet and sauté the onion until translucent.
- 3Add the garlic and turmeric and fry for 1 minute until the spice releases its aroma.
- 4Add the dry lentils, mix with the aromatic base, then pour in the vegetable broth and canned diced tomatoes.
- 5Cook covered over low heat for about 15 minutes, until the lentils soften and absorb most of the liquid.
