Garlic and Black Pepper Pork (Moo Gratiem Prik Thai) is a beloved Thai classic famous for its golden-brown garlic and rich, savory sauce. The secret to perfect results is choosing tender cuts like pork neck or loin to ensure the meat remains juicy. This recipe highlights the aroma of fresh garlic and white pepper, enhanced by oyster sauce and soy sauce. Served over hot jasmine rice with a crispy fried egg, it’s a quick and satisfying meal for any time of day.
Ingredients
- 300 g Pork (loin or neck) (about 2 cups, sliced)
- 2 tbsp Garlic (about 10-12 cloves)
- 0.5 tsp Ground white pepper
- 1 tbsp Oyster sauce
- 1 tbsp Light soy sauce
- 1 tsp Sugar
- 2 tbsp Vegetable oil
- 1 sprig Coriander (for garnish)
Instructions
- 1Pound the garlic and white pepper together until they form a coarse paste.
- 2Slice the pork into bite-sized pieces. Place in a bowl and season with oyster sauce, light soy sauce, and sugar. Mix well and marinate for 5-10 minutes.
- 3Heat vegetable oil in a pan. Add the pounded garlic and pepper, sautéing over medium heat until fragrant and light golden brown.
- 4Increase heat slightly and add the marinated pork. Stir-fry until cooked through and the sauce has reduced to your liking (add a splash of water if you prefer more sauce).
