Ingredients
- 300 g Chicken breast (1 large breast)
- 200 g Pasta (e.g. penne or fusilli) (about 2 cups dry pasta)
- 2 tbsp Mustard (Dijon or whole grain)
- 120 ml Heavy cream (30%)
- 120 ml Chicken broth
- 80 g Onion (1 small onion)
- 2 cloves Garlic
- 1 tbsp Olive oil
Instructions
- 1Cook the pasta in well-salted water al dente, according to the package instructions. Drain, reserving a bit of the cooking water for later.
- 2Cut the chicken breast into small cubes. Season generously with salt and pepper.
- 3Heat the olive oil in a large pan over medium-high heat. Add the chicken and fry until golden brown on all sides, about 5-7 minutes. Then remove the cooked chicken to a plate.
- 4In the same pan, sauté the finely chopped onion for about 3 minutes until softened. Add the minced garlic and fry for another 30 seconds until fragrant.
- 5Pour in the chicken broth, scraping up all the browned bits from the bottom of the pan with a wooden spoon. Add the heavy cream and mustard. Stir everything until a smooth sauce forms.
- 6Simmer the sauce over low heat for 2-3 minutes until slightly thickened. If it's too thick, you can add a little of the reserved pasta cooking water.
