Ingredients
- 200 g Short pasta (e.g., Penne)
- 150 g Baby spinach (about 4 large handfuls)
- 2 cloves Garlic cloves
- 120 ml Heavy cream
- 30 g Grated Parmesan (about 3 tbsp)
- 1 tbsp Olive oil
- 1 tsp Salt
- 0.5 tsp Ground black pepper
Instructions
- 1Boil a large pot of salted water and cook the Short pasta according to the package instructions.
- 2Before draining, reserve a small ladle of the pasta cooking water.
- 3While the pasta is cooking, heat the Olive oil in a large skillet over medium heat.
- 4Mince the Garlic cloves and sauté them in the pan for about 1 minute until they release their aroma.
- 5Add the Baby spinach to the pan and stir for 1 to 2 minutes until wilted and reduced.
- 6Lower the heat, then pour in the Heavy cream. Stir in the Grated Parmesan, Salt, and Ground black pepper.
- 7Simmer gently for 2 minutes to slightly thicken the sauce.
- 8Add the drained Short pasta to the skillet and toss well to coat. If the sauce is too thick, pour in a little of the reserved cooking water to loosen it. Serve immediately.
Chef's Tips
- •Keeping some starchy pasta water helps bind the sauce and makes it even creamier.
- •To add some crunch, you can sprinkle toasted walnuts or pine nuts over the dish just before serving.
- •A pinch of grated nutmeg also pairs beautifully with the cream and spinach.
