Ingredients

  • 500 g Broccoli (1 large head)
  • 200 g Potato (1 medium)
  • 1 pc Onion
  • 2 cloves Garlic
  • 750 ml Vegetable broth
  • 100 ml Heavy cream (30%)
  • 30 g Butter (2 tbsp)
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

    Finely dice the onion and garlic.

    Peel the potato and cut into small cubes. Divide the broccoli into small florets, and peel and finely chop the stem.

    Melt the butter in a pot. Add the onion and fry for 3 minutes, then add the garlic and fry for another minute until aromatic.

    Add the chopped potato and broccoli to the pot. Pour in the hot vegetable broth.

    Cook covered over medium heat for about 15-20 minutes until the vegetables are completely soft.

    Remove the soup from the heat. Using a blender, blend everything into a smooth and velvety cream.

    Pour in the heavy cream (30%), mix well, and season to taste with salt and black pepper.
