These stuffed sweet potatoes are a vibrant fusion of comfort and spice, perfect for using up fresh produce before it spoils. Ingredients
- 2 medium Sweet Potatoes
- 250 g Minced Beef
- 1 medium Green Bell Pepper
- 60 g Fresh Spinach
- 1 large Tomato
- 2 tbsp Yellow Curry Paste
- 0.5 medium Onion
- 2 cloves Garlic
- 1 tbsp Olive Oil
- 60 ml Yogurt
Instructions
- 1Preheat your oven to 200°C (400°F). Scrub the sweet potatoes, pierce them with a fork, and place on a baking sheet. Bake for 45-50 minutes until tender.
- 2While potatoes bake, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook for 3 minutes until soft.
- 3Add the minced beef to the pan. Cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
- 4Stir in the yellow curry paste and minced garlic. Cook for 1 minute until fragrant.
- 5Add the diced green bell pepper and cook for another 3-4 minutes until softened.
- 6Stir in the spinach and cook just until wilted. Remove from heat.
- 7Once the potatoes are done, slice them open lengthwise and fluff the inside with a fork.
- 8Spoon the beef mixture generously into the potatoes.
- 9Top with fresh diced tomato and a dollop of yogurt before serving.
