Ingredients

  • 300 g Turkey breast (about 1 large breast)
  • 240 g Chickpeas (canned/jarred) (1 can (drained weight))
  • 60 g Baby spinach (about 3 large handfuls)
  • 400 g Canned diced tomatoes (1 can)
  • 100 g Brown rice (about 1/2 cup dry rice)
  • 1 pc Onion
  • 2 cloves Garlic
  • 1 tbsp Olive oil
  • 1 tbsp Curry powder
  • 1 cm Fresh ginger (small piece)

Instructions

    Cook the brown rice according to the package instructions in lightly salted water.

    Cut the turkey breast into cubes of about 2 cm. Sprinkle with half of the curry powder.

    Heat the olive oil in a deep frying pan. Add the finely chopped onion and fry for 3 minutes until softened.

    Add the garlic pressed through a garlic press and the ginger grated on a fine grater. Fry for another minute, being careful not to burn the garlic.

    Add the turkey breast and fry on all sides for about 5-6 minutes until the meat is no longer raw.

    Pour in the canned diced tomatoes, add the drained chickpeas, and the rest of the curry powder. Simmer covered over low heat for 10 minutes.
