A crunchy, savory, and highly snackable alternative to popcorn, perfectly utilizing your pre-mixed Parmesan and nutritional yeast seasoning.
Turn a snacking emergency into a delicious victory with these Crispy Parmesan & Umami Chickpeas! If you find yourself craving a salty, crunchy snack but your popcorn kernels fail you, canned chickpeas are the ultimate savior. When roasted until deeply golden and crunchy, they become highly addictive little flavor bombs. Tossing them in a savory, umami-packed blend of nutritional yeast and Parmesan cheese creates an intensely satisfying bite that hits all the same notes as gourmet popcorn. The key to the best crunch is making sure you dry the chickpeas thoroughly before roasting them. Enjoy this high-protein, guilt-free snack!
Ingredients
- 400 g Canned Chickpeas (1 standard can)
- 1 tbsp Olive Oil
- 2 tbsp Nutritional Yeast
- 2 tbsp Parmesan Cheese
- 0.5 tsp Black Pepper
Instructions
- 1Preheat the oven to 200°C (400°F).
- 2Drain and rinse the canned chickpeas thoroughly. Spread them out on a clean kitchen towel and pat them completely dry. The drier they are, the crispier they will get.
- 3Transfer the dried canned chickpeas to a baking sheet and toss them with the olive oil and black pepper. Do not add your cheese mix yet, as it can burn in the hot oven.
- 4Spread them out in a single layer and roast in the oven for 20 to 25 minutes, shaking the pan halfway through, until they are golden brown and crunchy.
- 5Remove from the oven and immediately toss the hot canned chickpeas with your prepared nutritional yeast and Parmesan cheese mixture so it sticks perfectly.
- 6Let them cool for about 5 minutes before eating—they actually get crispier as they cool down!
Chef's Tips
- •If you have an air fryer, you can air fry the chickpeas at 200°C (400°F) for about 12 to 15 minutes instead of using the oven.
- •Wait until the very end to add salt. Parmesan is already quite salty, so taste them first before seasoning further.
