A velvety, high-protein plant-based mash that is gentle on the stomach and very easy to swallow.

If you are looking for a comforting and nutritious soft meal, look no further than this Nutricook Creamy Zucchini & Sweet Potato Lentil Mash. This dish is the epitome of comfort, specifically designed for those who need a soft meal that doesn't compromise on flavor or health. By using the Nutricook, we ensure that the sweet potato and red lentils break down into a silky, almost porridge-like consistency that is incredibly gentle on the digestive system and easy to eat. The combination of red lentils and sweet potato provides a powerhouse of fiber and complex carbohydrates, keeping you full while remaining diet-friendly. We also incorporate baby marrow (zucchini), which practically melts into the mash, adding a subtle hit of green nutrients without any tough textures. A splash of coconut milk adds a velvety mouthfeel and healthy fats. This soft meal is perfect for a quick dinner since the Nutricook does all the heavy lifting. Simply toss everything in, set the timer, and you have a high-protein, balanced vegetarian meal ready in minutes. It is also a great way to use up your baby spinach, which we stir in at the very end so it wilts instantly into the hot mash. Whether you're recovering from dental work or just in the mood for something soothing, this Nutricook Creamy Zucchini & Sweet Potato Lentil Mash is your new go-to.

Ingredients

  • 90 g Red Lentils (about 1/2 cup)
  • 150 g Sweet Potato (1 small potato, peeled and diced)
  • 100 g Baby Marrow (1 small zucchini, grated)
  • 120 ml Coconut Milk (about 1/2 cup)
  • 240 ml Water (1 cup)
  • 1 tsp Red Thai Curry Paste
  • 30 g Baby Spinach (1 large handful)

Instructions

  1. 1
Rinse the red lentils under cold water until the water runs clear.
  2. 2
Add the rinsed red lentils, diced sweet potato, grated baby marrow, water, and red thai curry paste into the Nutricook pot.
  3. 3
Close the lid and set the Nutricook to 'Pressure Cook' on High for 8 minutes.
  4. 4
Once the timer ends, perform a quick pressure release.
  5. 5
Open the lid and stir in the coconut milk and baby spinach. The heat from the mash will wilt the baby spinach instantly.
  6. 6
Use a spoon to mash any remaining chunks of sweet potato until the mixture is a smooth, soft consistency.
  7. 7
Let it sit for 2 minutes to thicken before serving.

Chef's Tips

  • Grating the zucchini (baby marrow) ensures it completely dissolves into the lentils for an extra soft texture.
  • If the mash is too thick, add a splash more water or milk.
  • For extra protein, you can stir in a spoonful of Greek yogurt just before eating.
