Ingredients
- 90 g Red Lentils (about 1/2 cup)
- 150 g Sweet Potato (1 small potato, peeled and diced)
- 100 g Baby Marrow (1 small zucchini, grated)
- 120 ml Coconut Milk (about 1/2 cup)
- 240 ml Water (1 cup)
- 1 tsp Red Thai Curry Paste
- 30 g Baby Spinach (1 large handful)
Instructions
- 1Rinse the red lentils under cold water until the water runs clear.
- 2Add the rinsed red lentils, diced sweet potato, grated baby marrow, water, and red thai curry paste into the Nutricook pot.
- 3Close the lid and set the Nutricook to 'Pressure Cook' on High for 8 minutes.
- 4Once the timer ends, perform a quick pressure release.
- 5Open the lid and stir in the coconut milk and baby spinach. The heat from the mash will wilt the baby spinach instantly.
- 6Use a spoon to mash any remaining chunks of sweet potato until the mixture is a smooth, soft consistency.
- 7Let it sit for 2 minutes to thicken before serving.
