A hearty vegetable and bean ragout in a light milk-based sauce, served alongside golden warmed quiche and pan-seared pork steaks.
The Creamy Harvest Vegetable and Bean Medley with Warm Quiche is a comforting, multi-textured dish that perfectly balances the freshness of garden vegetables with a rich, velvety sauce. This Creamy Harvest Vegetable and Bean Medley with Warm Quiche is designed to utilize your high-perishability items like broccoli and cauliflower while providing a high-protein, satisfying meal. The secret to this recipe lies in the way the milk creates a light yet savory base for the beans and roasted vegetables, turning simple ingredients into a gourmet experience.
We start by roasting the brussel sprouts and broccoli and cauliflower to bring out their natural sweetness through caramelization. The addition of beans adds a creamy, starchy element that thickens the sauce naturally without needing heavy cream. Serving this alongside a pre-made quiche not only saves time but also adds a buttery, flaky crust component to the plate. If you find your pork steaks are nearing their use-by date, they make an excellent pan-seared accompaniment to this dish, adding an extra layer of savory depth. Remember to season generously with salt and black pepper to help the flavors of the brussel sprouts shine through the creamy sauce. This Creamy Harvest Vegetable and Bean Medley with Warm Quiche is a great example of how to elevate pantry staples like canned beans into a star-quality dinner.
Ingredients
- 2 slices Quiche
- 2 pieces Pork Steaks (about 350g)
- 3 cups Broccoli and Cauliflower (about 250g florets)
- 1.5 cups Brussel Sprouts (about 150g)
- 250 ml Milk (about 1 cup)
- 1 can Beans (400g)
- 2 tbsp Butter
- 1 tbsp All-purpose Flour
Instructions
- 1Preheat your oven to 180°C (350°F). Place the quiche slices on one side of a baking sheet.
- 2Toss the broccoli and cauliflower and trimmed brussel sprouts with a little oil, salt, and pepper on the other side of the baking sheet. Roast for 15-20 minutes until the vegetables are tender and slightly charred.
- 3While the vegetables roast, season the pork steaks with salt and pepper. Heat a skillet over medium-high heat and sear the pork steaks for 4-5 minutes per side until cooked through. Remove from the skillet and set aside to rest.
- 4In the same skillet, melt the butter. Stir in the all-purpose flour and cook for 1 minute to create a roux.
- 5Slowly whisk in the milk, stirring constantly until the sauce thickens slightly. Lower the heat to medium-low.
- 6Drain and rinse the beans, then add them to the skillet along with the roasted broccoli and cauliflower and brussel sprouts.
- 7Stir gently to coat everything in the creamy sauce and simmer for 2-3 minutes until heated through.
- 8Serve the creamy vegetable and bean medley alongside the warm quiche and the pork steaks.
Chef's Tips
- •If the sauce becomes too thick, add an extra splash of milk to reach your desired consistency.
- •For extra flavor, add a pinch of nutmeg or dried thyme to the milk sauce while it simmers.
- •Ensure the pork steaks rest for at least 5 minutes before slicing to keep them juicy.
