- 400 g Chicken Breast
- 180 g Rice
- 1 tbsp Olive Oil
- 1 small Onion
- 3 cloves Garlic
- 150 g Spinach
- 120 ml Plain Yogurt
- 0.5 fruit Lemon
- 1 tsp Salt
- 0.5 tsp Black Pepper
Instructions
- 1Rinse the rice thoroughly. Cook according to package instructions with a pinch of salt.
- 2While rice cooks, dice the onion and mince the garlic.
- 3Slice the chicken breast into bite-sized pieces. Season with salt and black pepper.
- 4Heat olive oil in a large skillet over medium-high heat. Add the chicken breast and cook for 5-6 minutes until browned and cooked through. Remove chicken from the pan and set aside.
- 5In the same pan, reduce heat to medium. Add the onion and sauté for 3 minutes until soft. Add garlic and cook for 1 more minute until fragrant.
