Ingredients
- 450 g Frozen Striploin Steak (Thawed)
- 1 head Cauliflower
- 60 g Spinach
- 120 ml Cooking Cream
- 150 g Cherry Tomatoes
- 3 cloves Garlic
- 2 tbsp Ghee
- 1 tsp Salt
- 0.5 tsp Black Pepper
Instructions
- 1Cut the cauliflower into florets. Boil or steam them in a pot until very tender, about 10-12 minutes.
- 2Drain the cauliflower well and mash or blend it with 1 tablespoon of ghee, salt, and pepper until smooth. Set aside and keep warm.
- 3Cut the striploin steak into bite-sized cubes. Season generously with salt and black pepper.
- 4Heat the remaining ghee in a large skillet over medium-high heat. Sear the striploin steak bites for 2-3 minutes until browned but not fully cooked through. Remove steak from the pan.
- 5In the same pan, add the minced garlic and cherry tomatoes. Sauté for 2 minutes until tomatoes begin to blister.
- 6Lower the heat and pour in the cooking cream. Simmer gently for 2 minutes until the sauce slightly thickens.
- 7Stir in the fresh spinach and let it wilt into the sauce. Return the striploin steak to the pan and toss to coat and warm through.
