A rich and savory pasta dish featuring golden chicken breast and wilted spinach in a garlic parmesan sauce.
This creamy garlic parmesan chicken pasta is the ultimate comfort food that comes together in under 30 minutes. By combining tender pan-seared chicken breast with nutrient-dense fresh spinach, this dish balances indulgence with wholesome greens. The sauce is built from a simple roux of butter and milk, enriched with sharp parmesan cheese for a velvety texture without needing heavy cream. It is a perfect weeknight dinner that utilizes fresh produce while delivering a restaurant-quality Italian flavor profile right in your own kitchen.
Ingredients
- 250 g Penne Pasta
- 450 g Chicken Breast
- 150 g Fresh Spinach
- 250 ml Milk
- 60 g Parmesan Cheese
- 30 g Butter
- 3 cloves Garlic
- 1 tbsp Olive Oil
- 1 tsp Salt
- 0.5 tsp Black Pepper
Instructions
- 1Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Reserve about 60ml (1/4 cup) of pasta water, then drain.
- 2While the pasta cooks, season the chicken breast with salt and black pepper.
- 3Heat the olive oil in a large skillet over medium-high heat. Add the chicken breast and cook for 5-6 minutes per side until golden and cooked through. Remove from the skillet and set aside.
- 4In the same skillet, reduce heat to medium. Add the butter and minced garlic. Sauté for 1 minute until fragrant.
- 5Pour in the milk and scrape up any browned bits from the bottom of the pan. Simmer for 2-3 minutes until slightly reduced.
- 6Stir in the parmesan cheese until melted and smooth. Add the fresh spinach and toss until wilted, about 1-2 minutes.
- 7Slice the cooked chicken breast into strips and return it to the pan along with the cooked penne pasta.
- 8Toss everything together to coat in the sauce. If the sauce is too thick, add a splash of the reserved pasta water. Serve immediately.
Chef's Tips
- •If you have flour, whisking 1 tsp into the butter before adding milk will create an even thicker sauce.
- •Fresh lemon juice squeezed over the top cuts through the richness beautifully.
