- 8 large Eggs
- 250 g Chicken Breast
- 100 g Spinach
- 200 g Potatoes
- 1 small Onion
- 60 ml Milk
- 60 g Cheddar Cheese
- 1 tbsp Olive Oil
- 0.5 tsp Salt
- 0.25 tsp Black Pepper
Instructions
- 1Preheat your oven to 190°C (375°F).
- 2Dice the potatoes, onion, and chicken breast into small bite-sized pieces.
- 3Heat the olive oil in an oven-safe skillet over medium heat. Add the potatoes and cook for about 8 minutes until they start to soften.
- 4Add the chicken breast and onion to the skillet. Sauté for another 5-6 minutes until the chicken is cooked through and onions are translucent.
- 5Stir in the spinach and cook for 1-2 minutes until wilted.
- 6In a bowl, whisk together the eggs, milk, salt, and black pepper.
- 7Pour the egg mixture over the ingredients in the skillet. Do not stir, but gently shake the pan to distribute the liquid.
- 8Sprinkle the grated cheddar cheese over the top.
- 9Transfer the skillet to the oven and bake for 10-12 minutes, or until the eggs are set and the cheese is melted and bubbly.
