Ingredients

  • 8 count Large Eggs
  • 300 g Chicken Breast
  • 150 g Fresh Spinach
  • 100 g Cheddar Cheese
  • 60 ml Milk
  • 1 small Onion
  • 2 cloves Garlic
  • 1 tbsp Olive Oil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

    Preheat your oven to 200°C (400°F). Dice the chicken breast into small 1cm cubes, dice the onion, and mince the garlic.

    In a large bowl, whisk together the eggs, milk, half of the shredded cheddar cheese, salt, and black pepper until well combined.

    Heat the olive oil in an oven-safe skillet over medium-high heat. Add the diced chicken breast and season with a pinch of salt. Cook for 5-6 minutes until browned and cooked through.

    Add the diced onion to the skillet and sauté for 2 minutes until softened. Add the garlic and cook for another 30 seconds until fragrant.
