Ingredients
- 2 fillets Chicken Breast
- 60 g Fresh Spinach
- 60 g Cheddar Cheese
- 300 g Potatoes
- 150 g Carrots
- 2 cloves Garlic
- 2 tbsp Olive Oil
- 0.5 fruit Lemon
- 1 tsp Salt
- 0.5 tsp Black Pepper
Instructions
- 1Preheat your oven to 200°C (400°F).
- 2Wash and chop the potatoes and carrots into bite-sized chunks. Toss them in a bowl with half of the olive oil, salt, and black pepper.
- 3Spread the vegetables in a single layer on a baking sheet or around the edges of a baking dish. Roast for 10 minutes while you prepare the chicken.
- 4Roughly chop the spinach and mince the garlic. In a small bowl, mix the spinach, garlic, shredded cheddar cheese, and a squeeze of lemon juice.
- 5Cut a horizontal slit into the thickest part of each chicken breast to create a pocket, being careful not to cut all the way through.
- 6Stuff the spinach and cheese mixture into the chicken breast pockets. Secure with toothpicks if needed, or simply press the edges down.
- 7Rub the remaining olive oil over the outside of the chicken and season with a pinch of salt.
- 8Remove the vegetables from the oven briefly. Nestle the stuffed chicken breasts into the center of the pan surrounded by the vegetables.
- 9Return to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- 10Let the chicken breast rest for 5 minutes before serving.
Chef's Tips
- •If you have toothpicks, use them to seal the chicken pockets to keep the cheese inside.
- •For extra flavor, zest the lemon over the finished dish before serving.
