Perfectly fluffy whole sweet potatoes made in the air fryer, served with melted ghee, brown sugar, and toasted walnuts.
Roasting whole sweet potatoes in the air fryer creates a beautifully crisp skin and a tender, caramelized interior in a fraction of the time an oven takes. This recipe transforms a simple root vegetable into a comforting treat by utilizing your pantry staples like ghee and walnuts. It serves as a perfect canvas for both sweet and savory cravings, packing a punch of fiber and Vitamin A.
Ingredients
- 2 medium Sweet Potatoes
- 1 tsp Olive Oil
- 1 pinch Sea Salt
- 1 tbsp Ghee
- 1 tbsp Brown Sugar
- 0.5 tsp Cinnamon Powder
- 15 g Walnuts
Instructions
- 1Scrub the sweet potatoes thoroughly and pat them completely dry.
- 2Using a fork, poke holes all over the potatoes (about 6-8 times each) to allow steam to escape.
- 3Rub the skin lightly with olive oil and sprinkle with sea salt.
- 4Place in the air fryer basket (do not overcrowd) and cook at 200°C (400°F) for 35-40 minutes. Flip them halfway through cooking.
- 5They are done when a knife slides into the center with zero resistance.
- 6Slice open lengthwise. Fluff the inside with a fork, then add ghee, brown sugar, cinnamon powder, and crushed walnuts while steaming hot.
Chef's Tips
- •Savory Option: Use your Labne or Goat Cheese as a base, drizzle with Tahini and Pomegranate Molasses, and top with Zaatar.
- •Spicy Option: Top with Thai Chili Sauce, chopped Cashews, and cilantro (Frozen Coriander).
- •If your potatoes are very large, they may need an extra 5-10 minutes.
