Ingredients
- 400 g Frozen Minced Beef
- 600 g Sweet Potatoes
- 100 g Spinach
- 1 medium Zucchini
- 2 medium Carrots
- 75 g Frozen Peas
- 75 g Sweet Corn
- 1 small Red Onion
- 2 tbsp Tomato Paste
- 1 tbsp Maggi Seasoning Sauce
- 50 g Gouda Cheese
- 30 g Butter
Instructions
- 1Preheat your oven to 200°C (400°F).
- 2Peel and cube the sweet potatoes. Boil them in a pot of salted water for 15 minutes until tender. Drain and mash with butter, salt, and pepper. Set aside.
- 3While potatoes boil, heat a large skillet over medium-high heat. Add the minced beef and cook until browned. Drain excess fat if needed.
- 4Add chopped red onion, diced carrots, and diced zucchini to the skillet. Sauté for 5 minutes until softened.
- 5Stir in the tomato paste and Maggi seasoning sauce, cooking for 1 minute.
- 6Add the frozen peas, sweet corn, and spinach. Cook until the spinach is wilted and liquid has evaporated.
- 7Transfer the beef and vegetable mixture into a baking dish.
- 8Spread the mashed sweet potatoes evenly over the top.
- 9Sprinkle grated Gouda cheese over the mash.
