A hearty casserole featuring savory minced beef simmered with zucchini, spinach, carrots, peas, and corn, topped with creamy mashed sweet potatoes and melted Gouda.

This Sweet Potato & Beef Cottage Pie is the ultimate comfort food makeover, transforming a classic recipe into a nutrient-dense powerhouse. By swapping the traditional white potato mash for a vibrant sweet potato topping, we add a natural sweetness that perfectly balances the savory richness of the minced beef. But the real magic lies beneath the golden crust: a savory meat sauce that is absolutely packed with vegetables. We've incorporated spinach, zucchini, carrots, peas, and corn, effectively clearing out your produce drawer in one delicious swoop. The Maggi seasoning adds a deep umami kick that ties everything together, while a final layer of melted Gouda cheese ensures every bite is indulgent. Whether you are looking for a hearty lunch, a family-friendly dinner, or a meal-prep champion that tastes even better the next day, this cottage pie delivers on all fronts. It’s a brilliant way to consume a high volume of fiber and vitamins without feeling like you are eating a salad.

Ingredients

  • 400 g Frozen Minced Beef
  • 600 g Sweet Potatoes
  • 100 g Spinach
  • 1 medium Zucchini
  • 2 medium Carrots
  • 75 g Frozen Peas
  • 75 g Sweet Corn
  • 1 small Red Onion
  • 2 tbsp Tomato Paste
  • 1 tbsp Maggi Seasoning Sauce
  • 50 g Gouda Cheese
  • 30 g Butter

Instructions

  1. 1
Preheat your oven to 200°C (400°F).
  2. 2
Peel and cube the sweet potatoes. Boil them in a pot of salted water for 15 minutes until tender. Drain and mash with butter, salt, and pepper. Set aside.
  3. 3
While potatoes boil, heat a large skillet over medium-high heat. Add the minced beef and cook until browned. Drain excess fat if needed.
  4. 4
Add chopped red onion, diced carrots, and diced zucchini to the skillet. Sauté for 5 minutes until softened.
  5. 5
Stir in the tomato paste and Maggi seasoning sauce, cooking for 1 minute.
  6. 6
Add the frozen peas, sweet corn, and spinach. Cook until the spinach is wilted and liquid has evaporated.
  7. 7
Transfer the beef and vegetable mixture into a baking dish.
  8. 8
Spread the mashed sweet potatoes evenly over the top.
  9. 9
Sprinkle grated Gouda cheese over the mash.
  10. 10
Bake for 15-20 minutes until the cheese is melted and bubbly.

Chef's Tips

  • If the filling looks too dry, add a splash of water or broth before baking.
  • For a crispier top, broil for the last 2 minutes.
