A fast, high-protein stir-fry bowl featuring seasoned ground beef and wilted spinach over fluffy rice, garnished with crisp cucumber.
This quick and easy lunch brings a Korean-inspired flavor profile to your kitchen in under 20 minutes. By combining protein-rich ground beef with a savory-sweet soy glaze, this dish offers deep umami notes balanced by the fresh crunch of cucumber and nutrient-dense wilted spinach. It is an excellent way to utilize highly perishable ingredients like ground meat and leafy greens in a balanced, high-protein meal. The combination of garlic and ginger-like warmth (using available aromatics) creates a comforting bowl that satisfies cravings without requiring hours of simmering. Perfect for a midday energy boost.
Ingredients
- 450 g Ground Beef
- 185 g Basmati Rice
- 150 g Fresh Spinach
- 60 ml Soy Sauce
- 2 tbsp Brown Sugar
- 3 cloves Garlic
- 1 small Onion
- 0.5 medium Cucumber
- 1 tsp Vegetable Oil
- 0.5 tsp Black Pepper
Instructions
- 1Rinse the basmati rice thoroughly. Cook according to package instructions (usually simmering with water for about 15 minutes).
- 2While the rice cooks, dice the onion and mince the garlic. Slice the cucumber thinly and set aside for garnish.
- 3Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and cook for 2-3 minutes until softened.
- 4Add the ground beef and garlic to the skillet. Cook, breaking up the meat with a spoon, until browned and cooked through.
- 5Drain any excess fat if necessary. Stir in the soy sauce, brown sugar, and black pepper. Let it bubble for 1 minute to thicken slightly into a glaze.
- 6Add the fresh spinach to the skillet and toss gently until just wilted (about 1-2 minutes).
- 7Serve the beef mixture immediately over a bed of fluffy basmati rice, topped with the sliced cucumber for crunch.
Chef's Tips
- •If you like heat, add a pinch of red pepper flakes or sriracha if you have it.
- •For extra richness, fry an egg and place it on top of the bowl.
- •This recipe is great for meal prep; store the cucumber separately to keep it crisp.
