An incredibly light and elegant no-cook dessert featuring fresh berries and apples tossed in a fragrant lemon, honey, and rose water dressing.
After a rich, savory main course like black pepper beef, sometimes you need a dessert that is bright, incredibly light, and refreshing. This Refreshing Rose Water & Berry Fruit Salad is the ultimate elegant palate cleanser. By combining your highly perishable strawberries and blueberries with crisp apples and juicy pomegranate arils, you get a beautiful bowl of contrasting textures and sweet-tart flavors. The real magic happens in the simple dressing: a squeeze of fresh lemon juice to make the fruits pop, a drizzle of honey for natural sweetness, and just a tiny splash of rose water. The rose water elevates a simple bowl of fruit into a sophisticated, fragrant dessert that feels like it belongs in a high-end Mediterranean restaurant. Tossed together and finished with crushed pistachios for a buttery crunch, this naturally gluten-free and vibrant dessert takes less than 10 minutes to throw together with absolutely zero cooking required. It is the perfect guilt-free treat!
Ingredients
- 150 g Strawberries (about 1 cup)
- 75 g Blueberries (about ½ cup)
- 1 count Apple (medium)
- 0.5 count Pomegranate (about ½ cup seeds)
- 0.5 count Lemon (juice only)
- 1 tbsp Honey
- 1 tsp Rose Water
- 30 g Pistachios (about ¼ cup shelled)
Instructions
- 1Wash the strawberries, blueberries, and apple.
- 2Remove the stems from the strawberries and cut them into halves or quarters. Core and chop the apple into bite-sized cubes.
- 3Extract the seeds from the pomegranate half.
- 4In a small mixing bowl, whisk together the juice from the lemon, honey, and rose water.
- 5Add the prepared strawberries, blueberries, apple, and pomegranate seeds to a serving bowl.
- 6Pour the fragrant dressing over the fruit and gently toss to coat everything evenly.
- 7Roughly chop the pistachios and sprinkle them over the top right before serving for a buttery crunch.
Chef's Tips
- •If you want the flavors to meld even more, you can let the salad sit in the fridge for 10-15 minutes before adding the pistachios.
- •Rose water is very strong; stick to 1 teaspoon so it adds a beautiful floral note without tasting like perfume!
- •If your fruits are already very sweet, you can reduce the honey by half.
