Flaky, buttery puff pastry squares filled with sweet vanilla cream cheese and topped with fresh strawberries and blueberries.
Looking for a stunning dessert that looks like it took hours but actually takes minutes? These Mixed Berry & Cream Cheese Tarts are the answer. By utilizing ready-made puff pastry, you get a buttery, flaky base without any of the hard work. The filling is a rich, sweet, and tangy cream cheese mixture scented with vanilla powder, which perfectly balances the natural tartness of fresh summer berries. Mixed Berry & Cream Cheese Tarts are perfect for an after-dinner treat, a weekend brunch, or whenever you need a quick sweet fix. The high heat of the oven puffs the edges up into crisp, golden layers while the berries soften and release their natural juices into the creamy center. Drizzling a little honey over the warm pastries right as they come out of the oven gives them a beautiful bakery-style glaze and an extra touch of floral sweetness. You will absolutely love making these Mixed Berry & Cream Cheese Tarts!
Ingredients
- 250 g Puff Pastry (1 sheet)
- 115 g Cream Cheese (½ cup)
- 3 tbsp Icing Sugar
- 1 tsp Vanilla Powder
- 150 g Strawberry (about 1 cup)
- 75 g Blueberry (about ½ cup)
- 1 Egg
- 1 tbsp Honey
Instructions
- 1Preheat your oven to 200°C (400°F).
- 2In a bowl, mix the cream cheese, icing sugar, and vanilla powder together until completely smooth and creamy.
- 3Unroll the puff pastry and cut it into 4 equal squares.
- 4Using a knife, lightly score a smaller square inside each pastry square (about 1.5cm / ½-inch from the edge). Do not cut all the way through; this allows the edges to puff up like a crust.
- 5Spoon the cream cheese mixture evenly into the center of each scored square, spreading it out slightly.
- 6Slice the strawberry and arrange them over the cream cheese along with the blueberry.
- 7Beat the egg in a small bowl. Brush the outer borders of the pastry with the beaten egg to give it a golden shine.
- 8Bake for 15 to 20 minutes, or until the pastry is puffed and golden brown.
- 9Remove from the oven and immediately drizzle the warm tarts with honey. Serve warm or at room temperature.
Chef's Tips
- •Make sure your cream cheese is slightly softened before mixing so it doesn't get lumpy.
- •If you want an extra glossy finish on your fruit, you can brush them with a tiny bit of warmed honey as well.
- •Do not overfill the center with berries, or the juices might spill over the pastry edges while baking.
