Ingredients
- 100 g Black Lentils (about 1/2 cup)
- 1 count Baby Marrow (about 1 cup diced)
- 0.5 count Green Bell Pepper (about 1/2 cup diced)
- 350 ml Water (about 1.5 cups)
- 60 ml Greek Yogurt (about 1/4 cup)
- 1 tsp Lemon Juice
Instructions
- 1Rinse the black lentils under cold water until the water runs clear.
- 2Finely dice the baby marrow and the green bell pepper into small, uniform pieces to ensure they soften completely.
- 3Place the black lentils, baby marrow, and green bell pepper into the Nutricook pot.
- 4Add the water (or vegetable broth if you prefer) to the pot. Ensure the lid is locked and the pressure valve is set to 'Sealing'.
- 5Select the 'Pressure Cook' or 'Lentil' setting and set the timer for 15 minutes on High pressure.
- 6Once the cooking time is finished, allow for a natural pressure release for 5 minutes, then carefully release the remaining steam.
- 7Open the lid and stir the mixture. The black lentils should be very soft. If there is too much liquid, you can simmer for a minute on the 'Sauté' setting while stirring.
- 8Stir in the lemon juice for a bright finish.
- 9Serve in a bowl and top with a generous dollop of Greek yogurt.
Chef's Tips
- •For an even softer texture, you can use a fork to lightly mash some of the lentils and vegetables together before adding the yogurt.
- •If you want more flavor, add a pinch of salt or a teaspoon of your Red Thai curry paste before pressure cooking.
