A healthy homemade sour cream pie with a cottage cheese and rice flour base, creamy sour cream filling, and berries. A great alternative to sugar-laden sweets.
This stunning homemade smetannik is the perfect substitute for high-calorie eclairs and heavy desserts when you want something sweet yet healthy. We often deny ourselves treats because of extra carbs and white sugar, but this berry smetannik breaks all stereotypes! The base is made from cottage cheese and rice flour, making it lighter and crispier, while the delicate sour cream filling resembles a real cheesecake or soufflé. Using a natural sweetener allows you to enjoy dessert without the guilt. You can choose any berries to your taste — frozen cherries or currants add a pleasant tartness that perfectly balances the creamy sweetness of the filling.
The secret to the perfect homemade smetannik lies in the right texture. Be sure to let the dessert cool completely after the oven: the hot filling might seem runny, but as it cools, the starch and egg will make it dense, velvety, and incredibly tender. When kneading the dough, slightly moisten your hands with water — this way the cottage cheese and rice mixture won't stick to your fingers, and you'll easily form neat edges. This smetannik will be a real highlight of your weekend and a wonderful addition to a cup of freshly brewed coffee. Indulge in healthy and delicious baking without spending hours on complex processes.
Ingredients
- 80 g Cottage cheese 5% (about 1/3 cup)
- 120 g Rice flour (about ¾ cup)
- 420 g Sour cream 10% (20g for the dough, 400g for the filling)
- 2 count Eggs
- 5 tbsp Sweetener (Trehalose) (1 tbsp in crust, 4 tbsp in filling)
- 20 g Tapioca or corn starch (about 2 tbsp)
- 0.5 tsp Baking powder
- 1 pinch Salt
- 1 pinch Vanillin
- 150 g Berries (cherries or currants) (about 1 cup)
Instructions
- 1Preheat the oven to 180°C (350°F). If using frozen berries, pour hot water over them for 5 minutes at the very beginning, then strain and let the liquid drain well.
- 2Prepare the dough: in a deep bowl, mix the dry ingredients — rice flour, baking powder, 1 tablespoon of sweetener, and salt.
- 3Add the cottage cheese, 20 g of sour cream (or Greek yogurt), and 1 egg to the dry mixture. It's easiest to mix with a fork until a dense, uniform ball of dough forms.
- 4Grease a round baking pan with oil or line it with parchment paper. Place the dough ball in the middle and distribute it evenly across the bottom, forming edges 1.5–2 cm high. If the dough sticks, slightly dampen your hands with water.
- 5Prepare the filling: in a separate bowl, mix 400 g of sour cream, the 1 remaining egg, starch, 4 tablespoons of sweetener, and vanillin until smooth.
- 6Pour the prepared sour cream filling onto the dough base. Evenly distribute the prepared berries on top.
- 7Bake in the oven for 40 minutes. Once done, let the dessert cool completely so the filling stabilizes and acquires the correct texture.
Chef's Tips
- •To make the dough easier to distribute in the pan, use the bottom of a glass lightly greased with oil to press the base into an even layer.
- •Wait until the pie is completely cool before slicing. The hot filling may seem unstable but it will thicken as it cools.
- •If using fresh berries, there is no need to soak them; just wash and pat dry with a paper towel.
