Tender sliced pork stir-fried with a bold gochujang sauce—sweet, spicy, and savory in perfect authentic Korean balance. Simple to make and incredibly delicious.
If you're looking for a simple dish with an authentic Korean kick, Spicy Korean Stir-Fried Pork, also known as Jeyuk Bokkeum, is the perfect choice for your meal. This recipe combines tender pork slices with the signature heat and fermented depth of gochujang sauce. When stir-fried over high heat, the sauce thickens and glazes the meat beautifully, filling your kitchen with an irresistible aroma. The secret to great Jeyuk Bokkeum lies in marinating the pork with garlic, soy sauce, sesame oil, and Korean chili flakes to ensure deep flavor in every bite, before tossing it with onions for a touch of natural sweetness. This dish is not only quick and easy but also offers a satisfying variety of textures—from the soft pork to the slight crunch of onions. Whether served with hot rice, wrapped in fresh lettuce leaves like Ssangyong-gyupsal, or enjoyed with a cold drink, it's a guaranteed hit for any Korean food lover.
Ingredients
- 300 g Sliced pork (approx. 1.5 cups)
- 0.5 whole Onion (sliced into strips)
- 3 cloves Garlic (minced)
- 2 tbsp Gochujang
- 1 tbsp Korean chili flakes (Gochugaru)
- 1.5 tbsp Soy sauce
- 1 tbsp Sugar
- 1 tbsp Sesame oil
- 1 tbsp Vegetable oil (for stir-frying)
Instructions
- 1In a mixing bowl, combine the gochujang, Korean chili flakes, soy sauce, sugar, sesame oil, and minced garlic. Stir until the sauce is smooth.
- 2Add the sliced pork to the bowl. Toss well to coat the pork evenly with the sauce. Let it marinate for about 10-15 minutes.
- 3Heat a pan over medium-high heat and add the vegetable oil. Wait until the pan is hot.
- 4Add the marinated pork to the pan. Spread it out and stir-fry for about 3-4 minutes until the pork starts to cook and becomes fragrant.
- 5Add the sliced onion and continue stir-frying for another 2-3 minutes until the onion begins to turn translucent and the sauce glazes the meat beautifully.
- 6Transfer to a plate. Serve hot with steamed rice or with fresh vegetables for wrapping as desired.
Chef's Tips
- •For a deeper, mellow sweetness, you can add some grated apple or pear to the marinade.
- •Use medium-high heat for stir-frying to ensure the pork cooks quickly without the sauce becoming too watery.
- •Garnish with toasted sesame seeds or chopped green onions before serving for extra aroma.
