Classic Asian street food in your kitchen — fluffy rice fried with juicy crab meat, vegetables, egg, and soy sauce.
Looking for a way to turn an ordinary dinner into a true feast? Crab Fried Rice is exactly the dish that will transport you straight to a cozy Pan-Asian restaurant without leaving your own kitchen. This recipe perfectly combines the delicate texture of a real seafood delicacy with the heartiness of a classic side dish. The secret to perfect crab fried rice lies in proper preparation: the rice must be pre-cooked and ideally well-chilled, so that each grain absorbs the flavors without turning into a sticky mush. We'll add a little butter, which in combination with soy sauce creates that caramel-salty crust and incredibly deep umami flavor characteristic of the best wok dishes. Juicy vegetables — sweet carrots and green peas — will not only brighten the plate with vivid colors but also add a pleasant fresh crunch. Eggs will create a silky texture and harmoniously unite all the ingredients, while a pinch of sesame seeds at the very end will give the dish a light nutty aroma. Crab fried rice cooks in just a few minutes over high heat if you already have prepared grains. This makes it an ideal choice for a quick yet sophisticated lunch or dinner on a weekday. Don't be afraid to experiment with the heat intensity — it's the heat of the pan that gives that elusive smoky note that distinguishes authentic Asian cuisine. Be sure to try making this magnificent combination!
Ingredients
- 200 g Rice (1 cup (dry))
- 200 g Crab meat (about 1.5 cups)
- 2 pcs Eggs
- 1 pc Carrot (medium)
- 75 g Peas (about 0.5 cup)
- 2 cloves Garlic
- 3 tbsp Soy sauce
- 1 tbsp Butter
- 2 tbsp Sunflower oil
- 1 tbsp Sesame seeds
Instructions
- 1Thoroughly rinse the rice and boil until tender. Let the rice cool completely — ideally, use grains cooked the day before and kept in the refrigerator.
- 2Finely dice the carrot and mince the garlic. Shred the pre-thawed crab meat into fibers or cut into small pieces.
- 3Heat half of the sunflower oil in a deep skillet. Whisk the eggs with a fork and pour them into the pan, stirring constantly and quickly to make a light scrambled omelet. Transfer the finished eggs to a plate.
- 4In the same skillet, add the remaining sunflower oil and the butter. Sauté the garlic and carrot for a couple of minutes until soft. Add the frozen peas and cook for another minute.
- 5Increase heat to maximum, add the cooled rice and crab meat to the pan. Pour in the soy sauce and stir vigorously, frying everything together for 3-4 minutes.
- 6Return the scrambled eggs back to the rice, mix everything thoroughly so they are evenly distributed. Generously sprinkle with sesame seeds before serving.
Chef's Tips
- •The secret to fluffy fried rice is using cold grains. Freshly cooked hot rice will stick together and turn into mush when frying.
- •Prepare all ingredients in advance (chopped and placed in bowls), as the stir-frying process over maximum heat happens very quickly.
