A thick and hearty soup made with chicken wing broth, tender meatballs, tomato sauce, and plenty of fresh herbs.
This Rich Meat Soup with Meatballs and Tomatoes is the ultimate embodiment of home comfort and a professional approach to cooking. Preparing Rich Meat Soup with Meatballs and Tomatoes begins with creating a deep, rich broth from chicken wings, which serves as the perfect base. Using fresh tomatoes and tomato paste adds a pleasant acidity and vibrant color characteristic of the best Mediterranean recipes. In this Rich Meat Soup with Meatballs and Tomatoes, we combine the tenderness of minced meat balls with the aroma of fresh herbs: parsley and green onions. Adding butter at the end of cooking gives the soup's texture a velvety finish, while tomatoes fill it with summer freshness. If you want to make the flavor even more interesting, you can add some arugula directly to the bowl before serving — its nutty bitterness perfectly complements the meat ensemble. The secret to a perfect soup lies in the balance of spices and the use of high-quality ingredients, such as fresh ground meat and greens. This recipe doesn't require complex skills, but the result will exceed all expectations, warming and satisfying the whole family.
Ingredients
- 400 g Chicken Wings (about 6-8 pieces)
- 300 g Ground Meat
- 2 pcs Tomatoes
- 2 tbsp Tomato Paste
- 20 g Butter (about 1.5 tbsp)
- 1 bunch Parsley (about 30 g)
- 1 bunch Green Onion (about 20 g)
- 1 pc Egg
Instructions
- 1Place the chicken wings in a pot, pour in 2 liters of cold water, and bring to a boil. Skim off any foam and simmer on low heat for 30 minutes.
- 2Meanwhile, prepare the meatballs: mix the ground meat with one egg, salt, and pepper. Form small balls about the size of a walnut.
- 3Finely chop the tomatoes. In a skillet or directly in the pot (if sautéing separately), melt the butter and lightly sauté the tomatoes with the tomato paste for 5 minutes.
- 4Add the tomato mixture to the broth with the chicken wings.
- 5Carefully drop the ground meat meatballs into the boiling soup. Cook for another 10–12 minutes until they float to the surface.
- 6Finely chop the parsley and green onion. Add the herbs to the soup 2 minutes before it's finished.
- 7Turn off the heat, cover with a lid, and let the soup sit for 5-10 minutes before serving.
Chef's Tips
- •For a richer flavor, the chicken wings can be pre-fried until golden brown before boiling.
- •If you want to add some heat, add a little ground black pepper or paprika along with the tomato paste.
- •Serve the soup topped with fresh arugula and a spoonful of yogurt for extra tenderness.
