Ingredients
- 300 g Salmon
- 400 g Cauliflower
- 100 g Spinach
- 1 whole Lemons
- 3 cloves Garlic
- 2 tbsp Olive Oil
- 1 tsp Sea Salt
- 0.5 tsp Black Pepper
Instructions
- 1Preheat your oven to 200°C (400°F).
- 2Chop the cauliflower into small bite-sized florets. Mince the garlic.
- 3On a rimmed baking sheet, toss the cauliflower with half of the olive oil, half of the minced garlic, half of the sea salt, and half of the black pepper.
- 4Spread the seasoned cauliflower out in an even layer and roast in the oven for 15 minutes.
- 5Remove the sheet from the oven. Push the cauliflower slightly to the edges to make room for the salmon in the center.
- 6Place the salmon on the pan. Drizzle with the remaining olive oil, the juice of half a lemon, the remaining garlic, sea salt, and black pepper.
- 7Return to the oven and roast for another 10 to 12 minutes, or until the salmon is opaque and flakes easily.
- 8Remove from the oven and immediately scatter the fresh spinach over the hot pan, gently tossing it with the warm cauliflower so it wilts slightly.
- 9Slice the remaining half lemon into wedges and serve alongside the plated salmon, cauliflower, and spinach.
Chef's Tips
- •Ensure your cauliflower florets are cut to a uniform size so they roast evenly.
- •For an extra crisp on your salmon skin, broil for the final 2 minutes of cooking.
- •Avoid overcooking the spinach; the residual heat from the baking sheet and cauliflower is perfectly sufficient to wilt it while keeping its bright green color.
