Crisp, refreshing lettuce cups filled with a zesty, high-protein mix of tuna, boiled eggs, crunchy vegetables, and a healthy yogurt dressing.

If you are looking for a meal that hits all your macros without weighing you down, these High-Protein Spicy Tuna & Egg Lettuce Wraps are the absolute perfect choice. Packed with lean protein from the tuna and boiled eggs, this recipe keeps the carbs incredibly low by swapping out traditional wraps for crisp, refreshing lettuce leaves. Not only is it a brilliant low-carb option, but it also uses up highly perishable vegetables like crunchy cucumber and sweet bell peppers to give every bite an amazing texture. Instead of heavy mayonnaise, we bind the salad together with tangy yogurt and a splash of bright lemon juice, adding an extra boost of protein and keeping the calories perfectly in check. A little dash of hot sauce brings just the right amount of heat to wake up your palate. These High-Protein Spicy Tuna & Egg Lettuce Wraps are fast, healthy, and the ultimate lunch or light dinner when you want something fresh and filling.

Ingredients

  • 150 g Canned Tuna (1 standard can, drained)
  • 2 large Eggs
  • 4 leaves Lettuce (large sturdy leaves)
  • 60 g Cucumber (about 1/2 cup diced)
  • 50 g Bell Peppers (about 1/3 cup diced)
  • 3 tbsp Yogurt
  • 1 tbsp Lemon (juice of half a lemon)
  • 1 tsp Hot Sauce
  • 0.25 tsp Salt (to taste)
  • 0.25 tsp Black Pepper (to taste)

Instructions

  1. 1
Place the eggs in a pot of water, bring to a boil, and cook for 8-10 minutes until hard-boiled. Cool in cold water, peel, and roughly chop them.
  2. 2
While the eggs cook, wash the lettuce and gently separate the leaves to form cups. Set aside to dry.
  3. 3
Finely dice the cucumber and bell peppers.
  4. 4
In a mixing bowl, combine the yogurt, lemon juice, hot sauce, salt, and black pepper to create the dressing.
  5. 5
Drain the canned tuna and add it to the bowl along with the chopped eggs, cucumber, and bell peppers.
  6. 6
Gently fold everything together until well coated with the dressing.
  7. 7
Spoon the high-protein salad mixture generously into the center of the lettuce leaves and serve immediately.

Chef's Tips

  • If your lettuce leaves are thin, double them up to create a sturdier 'boat' for the heavy filling.
  • For extra crunch, you can add a sprinkle of chia seeds or chopped almonds over the top before eating.
