A fresh, quick wrap with creamy hummus, crunchy vegetables, and feta – ideal for hot summer days.
When temperatures rise, a light and refreshing lunch is just what you need. Our Mediterranean Summer Hummus Wraps are the perfect choice for anyone looking to spend minimal time in the kitchen while still enjoying a healthy meal. These Mediterranean Summer Hummus Wraps combine creamy hummus with crunchy vegetables and savory feta for a true flavor explosion. Why does this recipe work so well? It’s the balance between the earthiness of the chickpeas, the acidity of the lemon, and the freshness of the cucumbers. Mediterranean Summer Hummus Wraps are also wonderfully versatile – if you want more protein, add chickpeas; if you like it spicier, use chili hummus. A key tip for the perfect wrap: lightly warm the tortilla wraps in a pan so they don't break when rolling and the flavors come out better. Whether as a quick home-office lunch, a picnic snack, or a light dinner, these wraps are an absolute summer favorite. Preparation takes less than 15 minutes, making them the ideal dish for busy days. When buying, look for high-quality feta made from sheep or goat milk to achieve that authentic Mediterranean taste. Enjoy the lightness of summer with every bite!
Ingredients
- 2 whole Large tortilla wraps
- 150 g Hummus (about 2/3 cup)
- 0.5 whole Cucumber (about 6 inches long)
- 1 cup Cherry tomatoes (about 10-12 pieces)
- 50 g Feta (about 1/4 cup crumbled)
- 1 handful Baby spinach
- 1 tbsp Lemon juice
Instructions
- 1Halve the cherry tomatoes and cut the cucumber into fine sticks or slices.
- 2Lightly warm the tortilla wraps in a dry pan for about 15-20 seconds per side so they become flexible.
- 3Spread each wrap generously with hummus, leaving about 2 cm of space at the edges.
- 4Distribute the baby spinach, cherry tomatoes, and cucumber evenly in the center of the wraps.
- 5Crumble the feta over the top with your fingers and drizzle everything with a little lemon juice.
- 6Fold in the sides of the wraps slightly and then roll them up tightly from bottom to top. Cut diagonally and serve.
Chef's Tips
- •For extra crunch, you can add toasted pine nuts or chickpeas.
- •If the wraps are for meal prep, add the lemon juice just before eating to prevent sogginess.
