A rich and fluffy egg bake loaded with seared pork, tender broccoli, cauliflower, and shredded brussel sprouts.
The Creamy Garden Vegetable & Pork Frittata is the ultimate solution for a wholesome, protein-packed meal that makes the most of your fresh kitchen inventory. By using Milk and Eggs as the foundation, we create a silky, custard-like texture that perfectly cushions the hearty additions. This Creamy Garden Vegetable & Pork Frittata is particularly great for using up high-perishability items like Pork Steaks, Broccoli and Cauliflower, and Brussel Sprouts. The secret to a perfect frittata lies in the ratio of dairy to eggs; the Milk ensures the center remains tender and moist rather than rubbery.
In this version of the Creamy Garden Vegetable & Pork Frittata, we sear the Pork Steaks first to develop a deep savory crust, which contrasts beautifully with the sweetness of the Peas and the earthy notes of the charred Brussel Sprouts. Because we are using Broccoli and Cauliflower, you get a wonderful variety of textures in every bite. This dish is incredibly versatile—serve it hot for a decadent brunch, or cold for a quick meal-prep lunch. It is a fantastic way to clear out the fridge while feeling like you are eating at a high-end bistro. Remember to use a heavy-bottomed skillet to ensure even heat distribution, which prevents the bottom of the eggs from browning too quickly before the center is set. Enjoy this rustic, farmhouse-style meal any time of day!
Ingredients
- 8 count Eggs
- 120 ml Milk (about ½ cup)
- 300 g Pork Steaks (about 2 medium steaks)
- 200 g Broccoli and Cauliflower (about 2 cups florets)
- 100 g Brussel Sprouts (about 1 cup halved)
- 75 g Peas (about ½ cup)
- 1 tbsp Vegetable Oil
Instructions
- 1Preheat your oven to 190°C (375°F).
- 2Dice the pork steaks into small, bite-sized cubes. Season with salt and pepper.
- 3Heat vegetable oil in an oven-safe skillet over medium-high heat. Add the pork steaks and sear until browned and cooked through, about 5–6 minutes. Remove the meat from the pan and set aside.
- 4In the same skillet, add the broccoli and cauliflower and brussel sprouts. Sauté for 4–5 minutes until they start to soften and char slightly at the edges.
- 5Stir in the peas and the cooked pork steaks, spreading them evenly across the skillet.
- 6In a bowl, whisk together the eggs and milk until well combined and slightly frothy. Season with a pinch of salt and pepper.
- 7Pour the egg mixture into the skillet over the vegetables and meat. Let it cook on the stovetop for 2 minutes without stirring, just until the edges begin to set.
- 8Transfer the skillet to the preheated oven and bake for 12–15 minutes, or until the center of the frittata is set and the top is lightly golden.
- 9Let the frittata rest for 5 minutes before slicing and serving.
Chef's Tips
- •Shred the brussel sprouts finely if you prefer them to blend into the egg mixture rather than having chunky halves.
- •If you have any hard cheese in the fridge, sprinkling a little over the top before baking adds a lovely crust.
- •Ensure the skillet is well-oiled or seasoned to prevent the eggs from sticking to the sides.
