Ingredients
- 400 g Minced Chicken
- 200 g Paneer Cheese
- 2 tbsp Ghee
- 1 count White Onions (1 large onion, finely chopped)
- 4 cloves Garlic
- 2 tbsp Ginger (grated)
- 2 tbsp Tomato Paste
- 400 g Tomatoes (about 4 medium tomatoes, chopped)
- 240 ml Chicken Stock
- 120 ml Cooking Cream
- 1 tbsp Paprika
- 1 tsp Turmeric
- 1 tbsp Coriander Powder
- 1 tsp Garam Masala
- 1 tsp Salt
- 15 g Fresh Coriander (a small handful, chopped)
Instructions
- 1In a bowl, mix the minced chicken with half of the minced garlic, half of the grated ginger, a pinch of salt, and half of the paprika.
- 2Roll the mixture into small, bite-sized meatballs.
- 3Heat the ghee in a wide pan over medium-high heat. Add the meatballs and cubed paneer cheese, searing until lightly browned on all sides, then remove them to a plate.
- 4In the same pan, lower the heat to medium and sauté the chopped white onions until golden and soft.
- 5Add the remaining garlic and ginger, cooking for another minute until highly fragrant.
- 6Stir in the tomato paste, turmeric, coriander powder, garam masala, and the remaining paprika, cooking for 1 to 2 minutes to toast the spices.
- 7Pour in the chicken stock and chopped tomatoes, scraping up any browned bits from the bottom of the pan. Simmer for about 10 minutes until the sauce thickens and the tomatoes break down.
- 8Stir in the cooking cream and gently return the meatballs and paneer cheese to the pan.
- 9Simmer gently for another 5 to 7 minutes until the meatballs are fully cooked through and the sauce coats them beautifully.
- 10Garnish generously with chopped fresh coriander before serving.
Chef's Tips
- •If the chicken meatball mixture is a bit sticky to work with, lightly wet your hands with cold water before rolling them.
- •Allowing the tomato paste and garam masala to toast slightly in the ghee before adding the stock builds a much richer, deeper flavor profile.
