Ingredients

  • 500 g Ground beef
  • 1 whole Onion (1 medium onion)
  • 3 cloves Garlic
  • 1 whole Red bell pepper (1 medium pepper)
  • 400 g Canned diced tomatoes (1 can)
  • 240 g Canned red kidney beans (1 can, drained)
  • 150 g Canned corn (1 small can, drained)
  • 750 ml Beef broth
  • 1 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Sweet smoked paprika
  • 0.5 tsp Chili powder

Instructions

  1. 1
In a large pot, heat the olive oil. Add the diced onion and sauté for about 3 minutes until softened.
  2. 2
Add the minced garlic and the ground beef. Sauté over medium heat, breaking up the meat constantly, until completely browned (about 7-8 minutes).
  3. 3
Add the cumin, smoked paprika, and chili powder to the browned meat. Mix thoroughly and heat for another minute to allow the spices to release their aroma.
  4. 4
Add the diced red bell pepper to the pot, pour in the canned diced tomatoes and beef broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  5. 5
After this time, add the drained red kidney beans and corn to the soup. Cook for another 5 minutes to heat all ingredients through.
  6. 6
Remove the pot from the heat. Taste the soup and season to taste with salt and pepper.
