This simple one-pot recipe proves that excellent homemade chicken in curry sauce is within your reach, and its preparation takes just thirty minutes! The main secret of this dish is the proper balance of bold spices and the use of thick, velvety coconut milk, which mellows the spiciness and gives the whole dish a unique, deep texture. Traditional Indian cuisine wonderfully inspires the combination of fresh ginger, garlic, and golden curry spice, giving the sauce a beautiful, sunny color and an aroma that will instantly fill your kitchen. Whether you are planning a quick meal after an exhausting day at work or a festive dinner with friends, chicken in curry sauce always guarantees culinary success. Simply serve it with fluffy, perfectly cooked basmati rice and a generous sprinkle of fresh green cilantro to feel like you're in the best oriental restaurant from the comfort of your home. Remember that you can freely modify this recipe by adding your favorite vegetables, such as bell peppers, crunchy green peas, or spinach leaves, making your chicken in curry sauce even more nutritious and multi-dimensional. When choosing meat for this recipe, it is worth opting for high-quality poultry that remains tender after a short sauté. Ingredients

  • 500 g Chicken breast (2 medium breasts)
  • 2 tbsp Oil or olive oil
  • 1 whole Onion
  • 3 cloves Garlic
  • 1 tbsp Fresh ginger (finely grated)
  • 2 tbsp Curry powder
  • 400 ml Coconut milk (1 can)
  • 200 ml Tomato passata (scant cup)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 200 g Rice (for serving) (approx. 1 cup dry)
  • 0.25 cup Fresh cilantro (chopped)

Instructions

  1. 1
Cut the chicken breast into cubes, then season on all sides with salt and pepper.
  2. 2
Cook the rice according to the package instructions in lightly salted water.
  3. 3
In the meantime, heat the oil in a deep skillet over medium heat. Add the chicken breast and fry on all sides until golden. Remove the cooked meat from the pan and set aside.
  4. 4
In the same pan, add the finely chopped onion, minced garlic, and grated fresh ginger. Sauté for about 2-3 minutes until softened.
  5. 5
Add the curry powder and fry for another minute, stirring constantly to release all aromas and avoid burning the spices.
  6. 6
Pour in the coconut milk and tomato passata. Mix well and bring the liquid to a gentle simmer.
  7. 7
Transfer the fried chicken breast back into the sauce. Reduce the heat to low and simmer uncovered for about 10-15 minutes until the sauce thickens slightly and the meat is fully cooked and tender.
  8. 8
Serve the finished dish over portions of cooked rice and sprinkle generously with fresh cilantro before serving.

Chef's Tips

  • •To enhance the flavor and nutritional value, you can add a handful of fresh spinach or frozen peas near the end of simmering.
  • •If you prefer spicier food, add some chili flakes to the sautéing onion.
