An incredibly soft, protein-rich lentil and sweet potato mash topped with tangy Greek yogurt, made quickly in the Nutricook.
The Nutricook Creamy Red Lentil & Sweet Potato Mash with Greek Yogurt is the ultimate comfort food for those seeking a soft meal that doesn't compromise on nutrition. By using the red lentils from your kitchen, we take advantage of their natural tendency to dissolve into a smooth, velvety puree when pressure cooked. This healthy, diet-friendly recipe is specifically designed for a portion size of 1, ensuring you have a fresh meal without leftovers. The addition of sweet potato adds a gentle natural sweetness and a boost of Vitamin A, while the baby marrow (zucchini) provides a hidden serving of vegetables that melts into the background. Using a Nutricook or electric pressure cooker makes this a truly one-pot meal, keeping cleanup to a minimum and prep work incredibly fast. The finishing touch of Greek yogurt adds a creamy, tangy contrast and a significant hit of protein, making this a high protein and low calorie option. The acidity from the lemon brightens the earthy lentils, creating a balanced flavor profile. This dish is perfect for anyone needing a gentle, soft texture that is easy on the digestive system while remaining deeply satisfying. Nutricook recipes like this one maximize nutrient retention while delivering that perfect, spoonable consistency every time. Enjoy this Nutricook Creamy Red Lentil & Sweet Potato Mash with Greek Yogurt as a warming lunch or a light, nutritious dinner.
Ingredients
- 90 g Red Lentils (½ cup)
- 100 g Sweet Potato (1 small potato, peeled and diced)
- 1 count Baby Marrow (grated)
- 350 ml Water (1½ cups)
- 60 ml Greek Yogurt (¼ cup)
- 1 tbsp Lemon (about ½ lemon juice)
Instructions
- 1Rinse the red lentils under cold water until the water runs clear.
- 2Peel the sweet potato and dice it into very small cubes (about 1cm).
- 3Add the red lentils, sweet potato, and water into the Nutricook pot.
- 4Close the lid, set the pressure valve to 'Sealing', and select 'Pressure Cook' on High for 8 minutes.
- 5Once the timer is up, use the Quick Release to let the steam out.
- 6Open the lid and immediately stir in the grated baby marrow; the residual heat will cook it until soft in about 1 minute.
- 7Use a spoon to lightly mash any remaining chunks of sweet potato into the red lentils.
- 8Squeeze in the lemon juice and stir well.
- 9Transfer the mash to a bowl and top with a generous dollop of greek yogurt before serving.
Chef's Tips
- •For an even smoother texture, you can use an immersion blender directly in the pot before adding the yogurt.
- •If the mash is too thick, stir in a splash of milk or more water to reach your desired consistency.
- •Add a pinch of salt and pepper to the lentils before cooking for better flavor development.
