This Low-Sugar Guava Jam is the ultimate tropical breakfast treat, designed to give you that lush, spreadable texture without the massive sugar spike! By utilizing frozen guava pulp and a touch of gelatin powder, we completely bypass the need for traditional pectin and high sugar concentrations. The gelatin powder helps set the jam beautifully as it chills in the fridge, meaning you spend less time boiling the fruit on the stove. Sweetened purely with stevia sweetener powder, this jam brings the bright, floral flavor of guava to your morning toast or yogurt bowls. Since it has no traditional sugar preservatives, be sure to keep it refrigerated!
Ingredients
- 1 kg Frozen Guava Pulp
- 1 tbsp Gelatin Powder
- 2 tbsp Lemon (juice of 1 lemon)
- 4 tbsp Stevia Sweetener Powder (or to taste)
- 1 pinch Sea Salt
Instructions
- 1In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water. Let it sit for 5 minutes to bloom (it will absorb the water and become a thick paste).
- 2Place the frozen guava pulp in a wide saucepan over medium-low heat. Let it gently melt and come to a simmer.
- 3Once the frozen guava pulp is fully melted and simmering, squeeze in the juice from the lemon and add a tiny pinch of sea salt. Stir well to combine.
- 4Allow the fruit to simmer gently for 20 to 25 minutes, stirring occasionally. Because we are using gelatin to set the jam, you don't need to boil it down as severely as traditional preserves.
- 5Remove the pan from the heat. Immediately add the bloomed gelatin powder and the stevia sweetener powder, stirring continuously until the gelatin is completely dissolved into the hot mixture.
- 6Carefully ladle the hot jam into clean glass jars. Let it cool to room temperature, then transfer to the fridge. The jam will fully set into a lovely, spreadable texture as it chills.
Chef's Tips
- •Because this jam has no standard sugar to act as a preservative, it must be stored in the refrigerator, where it will keep for about 2 to 3 weeks.
- •Stevia brands vary greatly in sweetness concentration! Start with a smaller amount, taste your hot fruit mixture right after adding it, and gradually stir in more until it hits your preferred sweetness level.
- •Make sure you never aggressively boil the mixture after adding the gelatin, as extreme heat can destroy the gelatin's setting properties.
